Another day, another yummy salad ✅
Working at a restaurant over the past couple of summers has given me the opportunity to try some delicious dishes! This Citrus Quinoa and Salmon Salad is one of my ultimate favourites 🥗 – packed with:
★ citrus-infused quinoa ★ candied walnuts ★ radishes ★ cranberries ★ pan-seared salmon ★ arugula ★ mesclun mix leaves ★ lemon shallot vinaigrette
This salad is the whole package. It’s full of leafy greens, protein, healthy fats and antioxidants in one fell swoop! 🙌🏼 One of my favourite parts of this salad is that all of the vegetables and greens used were picked fresh from the restaurant’s garden. This salad can easily be recreated at home and makes for a filling lunch or dinner. PLUS…it is a great way to use up leftover salmon!
