Take your quarantine cooking to the next level with this vegan chickpea and sweet potato curry! 🍛

As most of us are, I have been spending lots of time in the kitchen trying out new recipes while self-isolating. For quite some time, I have considered trying out various curry dishes, but never found the time to do so.

This vegan chickpea and sweet potato curry dish was adapted from a recipe I saw in a buzzfeedtasty Youtube video. The best thing about it? – It is a one-pot meal that makes 4 large servings, and is ready in less than 30 minutes! It stores well in the fridge for up to a week and tastes even more delicious when reheated. 🤩 PLUS…it’s a great way to utilize the canned and frozen foods you may have in your freezer or cupboard right now. 🥫🍠 This dish is super versatile and can be made with whichever canned/dried beans and fresh/frozen vegetables you have available. 🥦🥕 Feel free to substitute or add vegetables, such as broccoli, carrots, snow peas, bell peppers, cauliflower, etc.

INGREDIENTS:
★ 2 Tbsp olive oil
★ 1 medium yellow onion, diced
★ 4 cloves garlic, minced
★ 2 tsp fresh ginger, minced
★ Spices: 4 tsp curry powder, 1 ½ tsp paprika, 1 tsp cayenne, 1 tsp turmeric, 2 tsp cumin powder, salt & pepper to taste
★ 2 medium sweet potatoes, peeled & cubed
★ 2-3 cups spinach
★ 1 can chickpeas (~15 oz), drained
★ 1 cup vegetable broth
★ 1 Tbsp lemon juice
★ 1 can diced tomato (~14 oz), drained
★ 1 can coconut milk (~14 oz)

INSTRUCTIONS:
1️⃣ Heat the oil in a large pot over medium heat. Add the onion and sauté for ~3 minutes, until translucent.
2️⃣ Add the garlic and sauté for ~2 minutes, until fragrant.
3️⃣ Add the curry powder, paprika, cayenne, cumin, turmeric, ginger, salt, and pepper. Stir and cook for ~2 minutes, until fragrant.
4️⃣ Add the potatoes and chickpeas, mix well until well-coated in spices.
5️⃣ Add the broth, lemon juice, and tomatoes, and coconut milk, stir to combine.
6️⃣ Bring the mixture to a simmer, and once bubbling, reduce heat to medium. Cook for 15-20 minutes, adding the spinach in the last 2 minutes of cooking.
7️⃣ Serve with the grain of your choice and/or some naan bread…Enjoy! 😋
