☀️The best summer salad☀️
Weekends up at the cottage call for some fun summer salads 🤩. Last night I prepared this Middle Eastern-inspired salad from lcbofoodanddrink and it was a hit! This salad was SO easy to make. It’s refreshing, healthy, and incorporates a variety of vegetables and colourful heirloom tomatoes 🍅🥒🌶.
INGREDIENTS (serves 4-6):
★ 1 lb (455 g) mixed tomatoes, halved
★ 2/3 English cucumber, chopped
★ 1 bell pepper, chopped
★ 1/3 cup sliced red onion
★ 2 sliced green onions
★ 1/4 cup chopped mint
★ 1 cup pita chips
★ 1 cup hummus
★ 3 Tbsp extra-virgin olive oil
★ 2 Tbsp red wine vinegar
★ salt & pepper to taste
1️⃣ Place vegetables in a large mixing bowl with green onions, red onions, and mint.
2️⃣ Drizzle vegetables with oil and vinegar. Season with salt and pepper.
3️⃣ Gently stir broken pita chip pieces into the salad. Mix thoroughly.
4️⃣ Spread hummus on the bottom of the serving platter.
5️⃣ Mount the salad on top of the hummus and serve!
TIP: I served this Middle Eastern salad with some longosmarkets baked falafel balls and it made for a delicious and satisfying meal!
