Patiently waiting for my bananas to ripen so I can remake this! 🍌
There’s seriously nothing better than a loaf of homemade banana bread. Especially when it’s filled with chocolate chips! Since I love discovering more nutritious versions of my favourite meals and treats, I decided to use chickpea flour in my most recent loaf. It turned out a bit more dense than usual but was equally as delicious 🙌🏼
𝐂𝐇𝐈𝐂𝐊𝐏𝐄𝐀 𝐅𝐋𝐎𝐔𝐑, also known as garbanzo bean flour, is an ultra-fine flour made of chickpeas. It’s naturally gluten-free, high in fibre, and protein-packed. One cup of chickpea flour provides 20 grams of protein, compared to 13 grams in white flour and 16 grams in whole-wheat flour. One cup of this flour also contains ~25% fewer calories than whole-wheat flour and is a great source of many vitamins and minerals, such as folate, iron, magnesium, phosphorus, copper, and manganese. While chickpea flour is still a source of carbs, it is lower on the glycemic index and has a lower carb content than traditional flour, which makes it effect blood sugar differently.
★ 1 1/2 cups chickpea flour
★ 1 Tbsp baking powder
★ 1 tsp ground cinnamon
★ 1/4 tsp sea salt
★ 2 large eggs (or 2 flax “eggs”: 2 Tbsp ground flax seeds combined with 4 Tbsp water)
★ 3 overripe bananas, mashed (optional: slice 1/2 of a banana for the topping)
★ 3 Tbsp coconut sugar (or 1/4 cup maple syrup)
★ 2 Tbsp melted coconut oil
★ 2 tsp vanilla extract
★ 1/2-1 cup dark chocolate chips
1️⃣ Preheat the oven to 350°F. Line a 9 x 5-inch loaf pan with parchment paper and grease or spray the pan.
2️⃣ In a medium bowl, whisk together the chickpea flour, baking powder, coconut sugar, cinnamon, and salt; set aside.
3️⃣ In a large bowl, combine the bananas, vanilla extract, eggs, coconut oil, and chocolate chips.
4️⃣ Add the dry ingredients to wet ingredients and mix until just combined.
5️⃣ Pour the batter into the prepared pan and top with banana slices, if desired. Bake for 40-50 minutes, or until a toothpick comes out of the center clean.
6️⃣ Remove from the oven and place on a wire rack to cool for 10 minutes. Enjoy!
