Brighten up your Monday with this colourful salmon dish 🌈
Last week, I made this incredibly delicious 𝐏𝐚𝐧-𝐅𝐫𝐢𝐞𝐝 𝐓𝐞𝐫𝐢𝐲𝐚𝐤𝐢 𝐒𝐚𝐥𝐦𝐨𝐧 𝐰𝐢𝐭𝐡 𝐀𝐯𝐨𝐜𝐚𝐝𝐨 𝐒𝐚𝐥𝐬𝐚 𝐚𝐧𝐝 𝐒𝐞𝐬𝐚𝐦𝐞 𝐒𝐧𝐚𝐩 𝐏𝐞𝐚𝐬. It’s packed with fresh veggies, complex carbs, healthy fats, and irresistible flavours that will leave you craving more! 😋
While this dish is abundant in many nutrients, it is particularly rich in heart-healthy omega-3 fatty acids due to 2 great sources…salmon and avocado! Omega-3 fatty acids are one of the “good” types of fat that are naturally present in many foods. Omega-3s may help lower the risk of heart disease, depression, dementia, and arthritis. Your body is not able to make this type of fat, so it must be consumed through food or supplements.
INGREDIENTS (serves 2):
★ 2 (6 oz) salmon fillets
★ 1 Tbsp marinade (of your choice)
★ 1 Tbsp + 2 tsp olive oil
★ 2 cups (½ lb.) sugar snap peas
★ 1 garlic clove, minced
★ 1 tsp ginger, minced
★ ½ tsp balsamic vinegar
★ ½ tsp coconut aminos or soy sauce
★ ½ tsp sesame oil
★ 1 tsp sesame seeds
★ 1 large avocado, peeled and diced
★ ½ red bell pepper, diced
★ ½ red onion, diced
★ ¼ cup fresh cilantro, chopped
★ 1 Tbsp fresh lime juice
★ 1 cup brown rice, cooked
1️⃣ 𝐓𝐇𝐄 𝐒𝐀𝐋𝐌𝐎𝐍: Pat the salmon dry with paper towels to remove moisture, and brush both sides with the marinade or seasonings of your choice (*I used the Soyaki Sauce from Trader Joe’s). Add 1 tsp of olive oil to a frying pan or skillet over medium heat. Place the salmon skin-side down in the pan. Cook until golden brown on one side, about 4 minutes. Turn the fish over with a spatula, and cook for another 3-4 minutes, until it is firm to the touch.
2️⃣ 𝐓𝐇𝐄 𝐒𝐍𝐀𝐏 𝐏𝐄𝐀𝐒: In a large skillet or wok, sauté the sugar snap peas in 1 tsp olive oil until crisp-tender. Add the garlic, ginger, vinegar, soy sauce, and sesame oil to the peas, and sauté for 1 minute. Sprinkle with sesame seeds.
3️⃣ 𝐓𝐇𝐄 𝐒𝐀𝐋𝐒𝐀: In a small bowl, lightly toss the avocado, red pepper, red onion, cilantro, lime juice, 1 Tbsp olive oil, and salt + pepper to taste.
4️⃣ 𝐀𝐒𝐒𝐄𝐌𝐁𝐋𝐘: Top the grain of your choice with the salmon, sugar snap peas, and a spoonful of avocado salsa!
