You’re gonna want to add this Spicy Szechuan Tofu and Veggie Stir Fry to your menu this week 🙌🏼
This dish is filled with healthy vegetables, crispy tofu, and a flavourful Szechuan sauce! 🤍 It’s super versatile and can be prepared with any veggies and protein you have on hand.
I decided to serve my stir fry over some Riceberry rice, but feel free to use any grain of your choice! Riceberry rice is a whole grain rice variety from Thailand that was developed in 2002. It has a rich purple pigment and is an ideal source of complex carbohydrates, dietary fibre, vitamins, minerals, and antioxidants due to its abundance of phytochemicals 🤯
★ 8–12 oz. tofu cubes
★ 2 Tbsp avocado oil (or another high-heat oil)
★ ½ yellow onion, thinly sliced
★ ½ red bell pepper, thinly sliced
★ 1 cup snap peas
★ 1 cup shredded carrots
★ 4 oz. mushrooms, sliced
★ salt & pepper to taste
★ 6-8 small dried red Chinese chili peppers (optional)
★ garnishes: scallions, sesame seeds, chili flakes
★ Szechuan sauce: ½ tsp Szechuan peppercorns (or black peppercorns), 1/4 cup coconut aminos, 3 Tbsp maple syrup, 1 Tbsp sesame oil, 1 Tbsp rice wine vinegar, 1 Tbsp mirin (optional), 3 minced garlic cloves, 2 tsp fresh minced ginger, and 1 Tbsp sambal oelek
1️⃣ Prepare the Szechuan sauce: toast the peppercorns in a dry skillet over medium heat until fragrant (~2 minutes), and then crush. Place all ingredients in a medium bowl and whisk until combined. Set aside.
2️⃣ Heat oil in a wok or skillet and season with some salt and pepper. Add the tofu cubes and sear them on all sides, until crispy and golden. Set aside.
3️⃣ To the same pan, add the onion and mushrooms and sauté over medium-high heat until tender (~3 minutes).
4️⃣Add the remaining veggies, the chili peppers, and lower heat to medium. Sauté the veggies, stirring for 3-5 minutes until just tender and still slightly crisp.
5️⃣ Add the Szechuan sauce, starting with ¼ cup. Toss in the crispy tofu right at the end.
6️⃣ Serve stir fry over the grain of your choice and sprinkle with garnishes. Enjoy and remember not to eat the dried chilis!😋
